Microgreens
What are microgreens and why should we eat them?
Microgreens are the initial sprouts or shoots of vegetables, such as - beetroot, Swiss chard, radish, broccoli, mustard and peas (although there are many more you can try!). Sprouts offer some of the highest levels of nutrients including - magnesium, phosphorus, manganese, vitamins C, K, and folate; chlorophyll, essential fatty acids, antioxidants and fibre.
What health benefits do microgreens provide?
Healthy Weight Management
Microgreens are nutrient-dense + low in calories.
Supports digestion
Sprouting releases enzymes which ‘predigest’ the nutrients in the seed making them easier to digest and absorb in the body.
Blood Glucose Control
Shown to improve blood glucose balance due to high fibre content.

A small seed tray or recycled milk carton ( I use my old oat milk cartons)

How to grow:
Use a small seed tray or recycle a food tub as a container for the seeds to grow in. Cut some felt or kitchen roll to the shape of the container and place it in the bottom, it will hold water well.
Wet the coco coir or kitchen roll and sprinkle the seeds on top.
After sowing, place the container on a warm windowsill or in a glasshouse to germinate. The ideal temperatures for germination are 18–22°C (65–72°F).
As the seeds begin to grow, make sure they have a regular supply of moisture by watering carefully or misting as they are delicate.
They will take appx 14 days to grow.
To harvest - cut with some scissors and add the micro greens to salads, soups and sandwiches.
Once harvested you will need to start all over again with new seeds in fresh soil.
